I often times will add diced tomatoes and green chilis, making it more than 3, but overall the base recipe is just 3 simple ingredients. What you’re going to need:

  • cheddar cheese *Tips 1
  • cream cheese softened
  • beer- you chose your best beer- Miller Lite or low-carb beer will work but see note *Tips 2
  • VARIATIONS: I often will add a 10 oz can of diced tomatoes and green chilis. Rotel is a great brand, but others will work too. Choose your favorite available brand.

Tips:

1.  In a pinch pre-shredded cheese works just fine.  A variety of flavors will also work such as sharp and white cheddar and even another kind of cheese like pepper jack fits the bill. 

2. Choose one of your favorite beers, I like a wheat beer or good pale ale, but many prefer a darker beer to a light beer.  The best thing about this dip is how the flavor of the beer compliments the cheese.  The type of beer you choose will be delicious no matter what you choose. Non-alcoholic beer will also provide that flavor and work just fine.

Easy Belgian White Beer Cheese Dip

This 3 ingredient (4 if you like diced tomatoes and green chilis" beer cheese dip, won't disappoint and is a cinch to whip up for any tailgate party.

Equipment

  • 1 large sauce pan
  • 1 whisk
  • 1 rubber spatula

Ingredients
  

  • 4 cups shredded cheddar cheese pre shredded cheese blends work great
  • 1 cup cream cheese 1 package chopped into 1inch cubes
  • 12 oz Belgian white beer any wheat or dark beer will work; any flavor you prefer to drink.
  • 10 oz diced tomatoes and green chilis 1 can

Instructions
 

  • In a large sauce pan, bring beer to a slow boil.
  • Once beer is boiling, add cream cheese, and continually whisk until smooth. This will take up to ten minutes. The more you whisk the smoother it will get. The cream cheese can stay gritty if you don't "over" whisk.
  • Once it is smooth, add the tomatoes and stir in completely.
  • Remove from heat, and add the cheddar in batches until all the cheese has been added and the mixture is smooth.
