  • 1 sheetpan
  • Aluminum Foil
  • nonstick skillet

Ingredients
  

  • 1-3 Large Baking Russet Potatoes sliced into ½ inch round pieces
  • 6 pieces of bacon diced
  • 1/8 cup bacon grease or olive oil
  • 2 cups Cheddar Jack or a favorite melting cheese
  • ½ cup Chopped Green Onion
  • Kosher Salt
  • Pepper

Instructions
 

  • Wash potatoes and slice into ½ inch pieces. Place them all into a large bowl, covering them in cold water for at least an hour to remove some of the starch.
  • Dice bacon and fry until crispy. Drain on a paper towel and reserve bacon grease.
  • Preheat oven to 375 degrees, and cover a sheet pan with aluminum foil.
  • Drain potatoes and completely pat dry. Spray the sheet pan with non-stick cooking spray and line it with a single layer of dry potatoes.
  • Brush each side of the potatoes with bacon grease and season with salt, pepper, and garlic powder.
  • Bake for 25 minutes, flip, and bake for an additional 10 minutes.
  • Remove from oven, top with cheese, bacon bits, and green onions, return to the oven for 5 minutes and remove.
  • Turn oven to broil and return to oven until cheese tops have turned a golden brown.
  • Serve on a platter immediately with your favorite dipping sauces, such as ranch or sour cream.
