I love a quick and easy dish and chicken is always my go to protein. So being able to grab a marinade I made earlier in the week, pour it over some browned chicken and bake for 30 minutes, would definitely be a hit when I made it. When I tasted it…….It blew my mind, and I knew I had to share it immediately. Multipurpose recipes like these, are really something I love to strive for. Even If I didn’t have another career; simple, fresh, delicious food is often times the most comforting and satisfying way to end the day. I paired this with my easy 3 ingredient cilantro lime rice, and it was quick and easy using my rice cooker. Anything to save me time, energy and my pocketbook. Wait, do people still say that? Am I that that person, and I am this old when I realized that it’s “uncool” to say that? Anyway, I saved some money too and had a delicous dinner without breaking the bank……
Savory Cilantro Lime Marinated Chicken Thighs
Equipment
- large deep skillet
- 9×13 baking dish
Ingredients
- 6 chicken thighs (3 large breasts-skin on cut in half) you can use skinless, just skip the prebaking stovetop browning.
- 3-4 tbsp olive oil
- kosher salt
- pepper
- garlic powder

Instructions
- Preheat oven to 350 degrees
- Season both sides of the chicken with salt, pepper, and garlic powder.
- Heat olive oil in skillet over medium to medium-high heat. Once hot, brown both sides of the chicken. Once brown, remove and place on a plate and prepare the rest of the process.
- Pour half of the cilantro lime marinade in the bottom of the baking dish. Place the chicken evenly on the bottom of the dish. Pour the remaining marinade over the chicken, ensuring all the chicken is evenly coated with all the lime goodness.
- Cover with foil and bake for 30 minutes.
- Serve with Cilantro Lime Rice.
