Savory Cilantro Lime Marinated Chicken Thighs

Equipment

  • large deep skillet
  • 9x13 baking dish

Ingredients
  

  • 6 chicken thighs (3 large breasts-skin on cut in half) you can use skinless, just skip the prebaking stovetop browning.
  • 3-4 tbsp olive oil
  • kosher salt
  • pepper
  • garlic powder
  • lime cilantro vinaigrette https://gastronomeguy.com/?p=1507

Instructions
 

  • Preheat oven to 350 degrees
  • Season both sides of the chicken with salt, pepper, and garlic powder.
  • Heat olive oil in skillet over medium to medium-high heat. Once hot, brown both sides of the chicken. Once brown, remove and place on a plate and prepare the rest of the process.
  • Pour half of the cilantro lime marinade in the bottom of the baking dish. Place the chicken evenly on the bottom of the dish. Pour the remaining marinade over the chicken, ensuring all the chicken is evenly coated with all the lime goodness.
  • Cover with foil and bake for 30 minutes.
  • Serve with Cilantro Lime Rice.
