Roasted Mozzarella Asparagus Chicken Thighs

A delicious, cheesy dinner that can be put on the table in less than an hour. This juicy, tender chicken recipe with easily end up on your list of go to dinners.

Ingredients
  

  • 6 boneless skinless chicken thighs trimmed of excess fat
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon sweet paprika
  • 1/8 teaspoon cayenne pepper
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • salt and fresh ground pepper to taste
  • 8 oz mozzarella cheese slices (I use enough cheese to cover asparagus
  • 1 llb asparagus spears trimmed
  • squeeze of fresh lemon juice for serving, optional

Instructions
 

  • Preheat oven to 400F.
  • Drizzle 2 tablespoons of olive oil in the bottom of a 9×13 baking dish
  • Place chicken thighs upside down in olive oil, evenly covering the bottom of the baking dish and season with salt and pepper.
  • Remove the thighs, or stack them on one side of the baking dish. Take the asparagus and spread them evenly on the bottom of the baking dish.
  • Salt and pepper to taste the asparagus and then place an even layer of mozzarella cheese on top, then finish with an even layer of the chicken thighs on top of the cheese and asparagus.
  • In a small mixing bowl combine garlic powder, paprika, cayenne pepper, thyme, oregano, salt and pepper.
  • Season the chicken with the seasoning .
  • Cover baking dish with aluminum foil and bake for 25 minutes.
  • Uncover and bake for an additional 15 minutes uncovered.
  • Remove from oven.
