A delicious, cheesy dinner that can be put on the table in less than an hour. This juicy, tender chicken recipe with easily end up on your list of go to dinners.
6boneless skinless chicken thighstrimmed of excess fat
2tablespoonsextra virgin olive oil
1/2teaspoongarlic powder
1/4teaspoonsweet paprika
1/8teaspooncayenne pepper
1/2teaspoondried thyme
1/2teaspoondried oregano
salt and fresh ground pepperto taste
8ozmozzarella cheese slices (I use enough cheese to cover asparagus
1llb asparagus spears trimmed
squeeze of fresh lemon juicefor serving, optional
Instructions
Preheat oven to 400F.
Drizzle 2 tablespoons of olive oil in the bottom of a 9x13 baking dish
Place chicken thighs upside down in olive oil, evenly covering the bottom of the baking dish and season with salt and pepper.
Remove the thighs, or stack them on one side of the baking dish. Take the asparagus and spread them evenly on the bottom of the baking dish.
Salt and pepper to taste the asparagus and then place an even layer of mozzarella cheese on top, then finish with an even layer of the chicken thighs on top of the cheese and asparagus.
In a small mixing bowl combine garlic powder, paprika, cayenne pepper, thyme, oregano, salt and pepper.
Season the chicken with the seasoning .
Cover baking dish with aluminum foil and bake for 25 minutes.
Uncover and bake for an additional 15 minutes uncovered.
