Wash potatoes and slice into ½ inch pieces. Place them all into a large bowl, covering them in cold water for at least an hour to remove some of the starch.
Dice bacon and fry until crispy. Drain on a paper towel and reserve bacon grease.
Preheat oven to 375 degrees, and cover a sheet pan with aluminum foil.
Drain potatoes and completely pat dry. Spray the sheet pan with non-stick cooking spray and line it with a single layer of dry potatoes.
Brush each side of the potatoes with bacon grease and season with salt, pepper, and garlic powder.
Bake for 25 minutes, flip, and bake for an additional 10 minutes.
Remove from oven, top with cheese, bacon bits, and green onions, return to the oven for 5 minutes and remove.
Turn oven to broil and return to oven until cheese tops have turned a golden brown.
Serve on a platter immediately with your favorite dipping sauces, such as ranch or sour cream.
