I am always looking for a way to spruce up a an old recipe or just try something new that can become an old recipe. I love raspberries and heading to steak house and getting the house dressing when it’s a raspberry vinaigrette, really makes me happy. I wanted to find a tart vinaigrette that could help me stay on track and serve in multiple recipes. As I get older, I really need go to recipes that can transform, not only one dinner, but a multitude of meals. This recipe not only is healthy, but a real show stopper when paired with chicken and fresh greens. Let me know what you think, and how you have tried this tart, fresh recipe.

Fresh Raspberry Vinaigrette

A delicious, tart raspberry vinaigrette is delicious on fresh greens and also as a marinade for chicken and pork.

Ingredients
  

  • 1/3 cup olive oil extra virgin
  • 3 tbsp apple cider vinegar
  • 1 tbsp maple syrup or honey
  • 1/2 tsp kosher salt
  • 1/4 tsp ground black pepper
  • 1 cup raspberries: fresh or frozen

Instructions
 

  • Combine all the ingredients in a food processor or blender.
  • Blend until smooth.
