Simple Lemon Vinaigrette
This classic lemon vinaigrette is not only simple and delicious on fresh greens and other salads, but works great as a marinade for chicken, pork and seafood.

- zest of 1/2 lemon zest before you juice the lemon
- 1/4 cup lemon juice freshly squeezed is best and will make all the difference in the final product
- 1/2 cup extra virgin olive oil
- 1 tsp kosher salt
- 1/2 tsp black pepper
In a glass measuring cup, whisk together lemon zest, lemon juice, olive oil, salt, and pepper until completely blended
Serve on salad greens or use as a marinade for chicken, pork or seafood.
