Oven Roasted Smashed Sausages
This easy-to-make, quick meal is perfect for a backyard summer barbeque and just as scrumptious in the oven on a cold night. Serve on a bun, on a bed of rice, or even with a handful of crispy oven fries and a side salad. Your favorite bratwurst or Italian sausage can pep up a delicious variation for your own tastebud's delight. Whip these up any night of the week and you won't be disappointed.

- 5-10 Italian sausages hot, mild, bratwurst-any soft sausage in a casing
- 1 bell pepper diced any color
- 1 red onion diced
- 1 jalapeno sliced into rings
- 1 cup shredded cheddar cheese or another cheese that melts easily.
Preheat your oven to 375 degrees.
Line a sheet pan with aluminum foil and spray with non-stick cooking spray.
Cut a lengthwise slit down each Italian sausage and flatten each one and keeping a shallow divot down the center.
Top each sausage with a thin layer of onion, and both types of peppers.
Finish with a generous layer of cheese on top.
Bake for 20 minutes until cooked through and cheese is melted.
