Mediterranean Corfu Turkey Burgers
These fantastic burgers are perfect during the workweek, and even better on the weekend to shake up the standard backyard cookout. The ingredients can also make for a perfect meatloaf combination if you are looking for that homecooked Sunday supper.

Large Mixing Bowl
- 1 pound ground turkey
- 1/2 cup chopped red onion
- 1 beaten egg
- 4 oz crumbled feta
- 1 cup chopped fresh spinach
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1/4 small red onion sliced thin
- 1 tomato sliced
- lettuce or spinach for topping

Tzatziki Sauce
- 1/2 cucumber peeled, de-seeded, and diced. English cucumbers work great
- 1 cup sour cream or greek yogurt
- 3 garlic cloves minced
- 1-2 tbsp lemon juice
- 1-2 tbsp dill chopped
- pinch of kosher salt
- pinch of black pepper
In a large bowl, combine ground turkey, egg, spinach, onion, garlic, feta, salt, and pepper, until mixed well.
cover a sheet pan with aluminum foil and spray with non stick cooking spray
divide the turkey into four equal mounds and form into patties. Place them on a prepared sheetpan covered in foil and sprayed with cooking spray.
Preheat your oven to 450 degrees.
Bake turkey burgers for 15 minutes, checking for a cooked temp of at least 160 degrees.
Top Burger with Tzatziki Sauce, spinach, finely sliced onion and tomato on a bun of your choice. Enjoy with some oven fries.
Tzatziki Sauce
In a small bowl, combine sour cream, cucumber, dill, lemon juice, garlic, salt, and pepper.
